Ingredients
- 800g Pork loin steaks
- 3 tbsp Greek yoghurt
- 1 Lemon (zest)
- 200g Pistachio (roughly chopped)
- 2 tbsp Break crumbs
- 500g Linguine
- Pesto Sauce
- 100g Rocket
- 1 clove Garlic
- 1 Lemon (juice)
- 40g Parmesan
- 150ml Olive oil
- 20g Pine nuts
Directions
Step 1
Preheat oven to 200°c Bring a pot of water to the boil for pasta In a food processor, place all ingredients to make pesto.
Step 2
Blitz until it resembles a creamy chunky sauce. Set aside Put pasta in water and cook according to packet instructions.
Step 3
Mix pistachio, breadcrumb and lemon zest in a bowl.
Step 4
Seal steaks either side on a hot pan/grill.
Step 5
Remove from heat and coat one side yoghurt.
Step 6
Place pistachio mixture on a tray and press yogurt side of steak into crumb mixture.
Step 7
Place the steaks into the in the oven for approximately 8-10 minutes to finish. Remove from oven and set aside for 3 minutes before serving.
Step 8
While the steaks finish cooking in oven, strain pasta and toss through pesto while it’s still hot. Finish pasta with parmesan cheese and serve with loin steaks.
