Ingredients
- ¼ cup White sugar
- 8 slices Dried apple
- 8 Mini brioche buns
- 500g Family Chef Pork Belly
- Snow pea sprouts
- Red garnet sprigs or other seasonal herb garnish
Directions
Step 1
Preheat oven to 180°C. To get that delicious crispy pork belly place pork, rind-side up, in an oiled medium roasting pan. Wipe rind dry with paper towel. Rub with olive oil then rub with salt. Roast for 30 mins.
Step 2
Place the sugar in a large, heavy-based frying pan over medium heat and cook, shaking the pan occasionally, until caramel forms. Drizzle over the dried apple and allow to cool.
Step 3
Slit the buns almost through, and place on an oven tray alongside the pork belly roast for the last 5 minutes to warm through.
Step 4
Top the prepared brioche with the pieces of crispy pork belly, toffee apple, snow pea sprouts and red garnet sprigs. Serve immediately.
