Healthy, tasty, easy peasy.


    • 1kg “Ready to Rock” pre-cooked BBQ pork ribs
    • 400g packet undressed coleslaw
    • 1 large royal gala apple, peeled and julienned
    • ½ cup garlic aioli
    • Juice of ½ a lemon
    • 2kg kipfler potatoes, washed and halved lengthways
    • Olive oil for drizzling
    • 1 tsp sweet smoked paprika
    • 1 tsp garlic powder
    • Salt & pepper for seasoning
    • Pre-heat oven to 180c.
    • Toss the potatoes in the paprika, garlic powder, some salt and pepper and drizzle generously with olive oil till well coated. Arrange across two baking pans and put into the oven for 40-45 mins.
    • In a salad bowl, mix together the coleslaw, apple, lemon juice and garlic aioli and set aside.
    • When the potatoes only have 15 mins left to go, put the ribs in the oven in an ovenproof dish, covered with foil, to heat through.
    • Serve the ribs alongside the chips and slaw with a generous dollop of the sauce from the ribs to dip the chips into.
