Healthy, tasty, easy peasy.


    • 3 Lebanese cucumbers
    • 1 packet mini cucumbers
    • ½ bunch mint
    • ½ bunch coriander
    • ½ bunch basil (optional)
    • ½ bunch spring onions (optional)
    • ½ tablespoon fish sauce
    • 1 tablespoon rice wine vinegar
    • ½ teaspoon sugar or honey
    • 3 tablespoons ground peanuts
    • 1 small packet fried shallots
    1. Wash and dry cucumbers and all herbs.
    2. Top and tail Lebanese cucumbers and then peel into long strips using a vegetable peeler.
    3. Slice ends of mini cucumbers and then cut into thin slices.  
    4. Make dressing by mixing fish sauce, rice wine vinegar and sugar or honey.
    5. Toss cucumber peels and slices with most of the herbs, spring onions and dressing.
    6. Plate cucumber salad and then garnish with ground peanuts, shallots and remaining herbs.
