    Ingredients

    For the pork-

    • 800g pork loin fillet, finely sliced (helps if it’s partly frozen prior to slicing)
    • 2 tbsp light soy sauce
    • 2 tbsp dark soy sauce
    • 1 tbsp brown sugar
    • 1 tbsp honey
    • 1 tbsp sesame oil
    • 1 tbsp sesame seeds, toasted
    • 1 spring onions, chopped
    • 4 cloved garlic, minced
    • ½ tsp black pepper         

    To go with the pork-

    • 1 head of lettuce, washed and carefully pulled apart, whole leaves intact
    • some Pickled daikon (Japanese radish), sliced
    • some red chillies, sliced
    • some kimchi (Korean fermented pickled cabbage)
    • some slices of spring onion
    • some bean shoots
    • some cooked rice (hot or cold)
    • some hoisin sauce and chilli sauce
    Directions
    • Mix the pork and all the marinade ingredients together in a bowl and set aside for at least half an hour to marinate.
    • Fry off in a wok or large fry pan in 2 batches for 3-5 mins till cooked through with all the other ingredients on a sharing board.
    • To eat, each person takes a lettuce “cup” and fills it with some pork and desired fillings. Traditionally, you eat the whole thing in one big mouthful!
