Crispy Peanut Pork Belly Sliders

  • ¼ cup White sugar
  • 8 slices Dried apple
  • 8 Mini brioche buns
  • 200g Freshly cooked Crispy Peanut Pork Belly
  • Snow pea sprouts
  • Red garnet sprigs or other seasonal herb garnish


Step 1

Place the sugar in a large, heavy-based frying pan over medium heat and cook, shaking the pan occasionally, until caramel forms. Drizzle over the dried apple and allow to cool.

Step 2

Slit the buns almost through, and place on an oven tray alongside the cooked pork. Heat through in a preheated moderate oven (180C) for 5 minutes to warm through.

Step 3

Top the prepared brioche with pieces of pork, toffee apple, snow pea sprouts and red garnet sprigs. Serve immediately.
