• Always cut meat across the grain to keep it tender.
  • Meats continue to cook after being removed from heat. Let rest, covered, for 1–2 minutes in a warm spot. Rest roasts for 5–10 minutes under foil.
  • Try your pork with a hint of pink. Pork does not need to be overcooked. When cooked as recommended there may be a faint hint of pink in the centre.
