Japanese Pork & Soba Stir-Fry

Ingredients

  • 180g Soba
  • 2 tbsp Vegetable oil
  • 500g Pork topside strips
  • 1 Brown onion, thinly sliced
  • 1 Red capsicum, thinly sliced
  • 1 clove Garlic, crushed
  • 1 tsp Finely grated fresh ginger
  • 150g Snow peas, halved diagonally
  • 1 bunch Broccolini, chopped
  • 125g Baby corn, halved diagonally
  • ¼ cup Teriyaki marinade
  • 1 tbsp Soy sauce
  • 1 tbsp Rice wine vinegar
  • 2 tsp Honey

Directions

Step 1

Cook the noodles in a large saucepan of boiling water for 3-4 mins or until just tender. Drain. Rinse under cold water and drain well.

Step 2

Meanwhile, heat half the oil in a wok over medium-high heat. Stir-fry the pork, in two batches, for 3-4 mins or until browned lightly. Transfer to a plate.

Step 3

Heat the remaining oil in wok over medium-high heat. Add the onion and stir-fry for 2-3 mins or until softened. Add the capsicum, garlic and ginger and stir-fry for 2 mins. Add the snow peas, broccolini and baby corn and stir-fry for a further 2 mins.

Step 4

Add the sauces, vinegar and honey and stir-fry for 2 mins. Return the pork to the wok with the drained noodles. Toss for 1-2 mins or until heated through. Serve.

TIP: If pork topside strips are unavailable, use 500g pork loin steaks, thinly sliced. Soba noodles can be replaced with udon noodles.
