Healthy, tasty, easy peasy.


    • 600g pack of “Easy peasy” ready-made pulled pork
    • 350g corn chips
    • 2 cups grated cheese
    • 400g tin of Mexican black beans, rinsed and drained
    • 2 large avocados
    • Juice from ½ lime
    • 2 spring onions, finely sliced
    • 1 tbsp finely chopped coriander
    • 1 jar tomato salsa
    • Small tub of sour cream
    • Pre-heat oven to 200c.
    • Empty the pulled pork with sauce into a large microwave safe dish or pan along with the black beans and the salsa (reserving ¼ cup for the guacamole). You can either heat this on low heat on the stove or in the microwave, mixing together. Keep warm.
    • Empty the chips into a large baking dish and cover with the grated cheese before putting into the oven for 10 mins.
    • Scoop the avocado out into a bowl and mash with a fork. Mix in the lime juice, the spring onions (reserving some for garnish), reserved tomato salsa and coriander.
    • Once the corn chips and cheese are ready, top with the pulled pork mix then the guacamole and sour cream. Garnish with the reserved spring onions and put in the centre of the table to share!
