Healthy, tasty, easy peasy.


    500g pork mince
    1 tsp sesame oil
    1 tsp olive oil
    1 clove garlic (finely chopped)
    1 knob ginger (finely chopped)
    4 shallots (sliced on the diagonal)
    ½ red onion
    1 carrot
    2 Tbsp soy sauce
    2 Tbsp oyster sauce
    2 Tbsp rice wine vinegar or white wine vinegar
    ½ bunch coriander
    2 heads baby cos lettuce or witlof

    Mango salsa
    1 mango
    1 tomato
    ½ red onion
    ¼ bunch mint
    Olive oil
    Sauté onion, garlic and ginger for 1 minute in olive oil and add sesame oil

    Add pork mince to the pan and brown

    Add the carrot, soy and oyster sauce, vinegar and season to taste with salt and pepper

    Prepare mango salsa by finely dicing mango, tomato and onion. Slice mint and add to mixture. Finish with salt, pepper and olive oil

    Add coriander and shallot to pork mince mixture before removing from heat

    Serve mince in the cos leaves and top with mango salsa
