    Ingredients

    Patties

    • 1kg pork mince
    • 1 large egg
    • 1 cup fresh breadcrumbs
    • 1 tsp salt
    • 3 tbsp Thai green curry paste
    • 3 spring onions, finely chopped

    The sambal

    • 2 cups dried shredded coconut, pre-soaked in 2 cups of boiled water for 20 mins
    • 2 tsp fish sauce
    • 2 tsp brown sugar
    • Juice of 2 limes
    • 1 long red chilli, roughly chopped
    • Handful of coriander,  roughly chopped
    • 1 tbsp coconut oil

    Dirty rice

    • Leftover cooked rice to serve 4-6 people
    • 1 tbsp minced garlic

     

    Directions
    • Drain the coconut and put into a food processor with the rest of the sambal ingredient and blitz till finely chopped. Refrigerate and set aside.
    • Mix all the patty ingredients together thoroughly, form patties roughly between the size of a golf ball and a tennis ball and fry in a non-stick pan in the coconut oil on medium heat for 5 mins each side till cooked through
    • Once all the patties are cooked, put the cooked rice and garlic into the pan to soak up all the leftover flavours from the pan as it fries. Fry for 5 mins and serve with patties and sambal.
