Healthy, tasty, easy peasy.


    300 g pork stir-fry strips
    2 tbs peanut oil
    2 eggs, beaten
    1 onion chopped
    3 cloves garlic, crushed
    6–7 cups steamed medium grain rice
    2 ripe tomatoes, diced
    3 spring onions, chopped
    12 coriander leaves


    3 tbsp fish sauce
    1 tbsp soy sauce
    2 tsp brown sugar
    1/3 cup chicken stock
    Wash and steam rice and then fluff up with a fork. Mix all sauce ingredients together.

    Heat wok or fry pan until hot. Add a drizzle of oil and cook 2 thin omelettes and roughly chop. Stir-fry garlic until fragrant. Stir-fry pork in 1–2 batches for about a minute and remove.

    Add a little oil, stir fry onion for 30 seconds. Add rice and stir fry until hot. Return pork.

    Mix and add sauce mixture. Add egg and heat through. Sprinkle or mix through tomatoes, spring onions, coriander and serve.

    Tasty Tip: Serve with cucumber, lime or lemon wedges and chilli sauce. Toss through some steamed green peas.
