Gather all equipment and prepared ingredients. Heat non-stick pan (or wok) until medium hot. Add a drizzle of oil and stir-fry garlic for a few seconds. Stir-fry pork in 1–2 batches. Cook pork for about 1–2 minutes until ‘medium done' and remove.
Add a little more oil, stir-fry onions, add tomatoes, stock, sugar and simmer for a minute. Season and taste sauce, add cooked penne and return pork. Add fresh herbs.
Heat through, taste and sprinkle with parmesan.
Add some sauteed bacon, salami or spicy sausage.
Try a touch of white wine, chilli.
Add some peas and button mushrooms towards the end of cooking.
Finish with a little cream.
