Gather all equipment and prepared ingredients. Heat non-stick pan (or wok) until medium hot. Add some butter and stir-fry pork in 1–2 batches. Cook pork for about 1–2 minutes until ‘medium done' and remove.
Add butter, stir-fry diced onion, ham and paprika without to much colour. Add cream, stock and simmer for a minute. Season and taste sauce, return pork and add parsley.
Heat through, taste and serve with steamed rice, lemon and seasonal vegetables.
Add some button mushrooms and capsicum.
Add a touch of white wine or lemon.
