    Ingredients
    500 g Pork stir-fry strips
    cornflour
    peanut oil for cooking

    Sauce

    1 tbsp sesame oil
    3 garlic cloves, crushed
    1 cm piece ginger, chopped
    ½ chilli, chopped
    ½ cup water
    ¼ cup tomato sauce to taste
    ¼ cup white vinegar to taste
    ¼ cup brown sugar to taste

    1 onion, diced
    ½ green capsicum, diced
    2 spring onions, chopped

    Qty steamed rice
    ground pepper and salt
    Directions
    Gather all equipment and prepared ingredients.

    To make sauce, heat sesame oil, saute garlic, ginger and chilli until fragrant, add water, tomato sauce, vinegar, sugar and bring to simmer and taste. Thicken with a little cornflour and water mix if desired. Add vegetables and serve slightly crisp. Add other vegetables like diced pineapple and tomatoes.

    Heat peanut oil, season pork and toss with some cornflour. Deep fry pork in 1–2 batches until crisp.

    Serve on freshly steamed rice with sweet and sour sauce.

    Tips:
    Season pork with some Chinese five-spice powder.
    To make a pork stir-fry, sear pork, add vegetables and toss through your favourite sweet and sour sauce.
    Finish with more sesame oil. Serve with sliced cucumber.
