Pre-heat BBQ or griddle plate on a medium heat for 10 minutes prior to cooking
In a large non metallic bowl combine the lemon juice and zest, olive oil and sage leaves. Marinate the Pork cutlets for up to 4 hours.
Place the marinated Pork cutlets onto the pre-heated BBQ and cook 4–5 minutes each side until cooked the way you like it.
Toss together the steamed potatoes, spinach leaves, thinly sliced apples, Olive Oil and apple cider vinegar.
Arrange the salad on individual serving plates and top with the BBQ Pork cutlet.
Serve hot with fresh crusty bread.
(Notes: Apple cider vinegar maybe replaced with lemon juice or verjuice.)
