    Ingredients

    400g cooked cannellini beans
    1 packet of Easy Peasy Pulled Pork
     2 Tomatoes, diced
    100g Chorizo, diced
    2 tsp Paprika
    100g Bread crumbs, chunky or roughly chopped cubes of bread
    80g Macadamia nuts, crushed
    ¼ bunch Flat leaf Parsley
    Salt
    Pepper

    Directions

    1.    If using dried beans, soak beans overnight and cook until tender.
    2.    If using tinned beans, drain and wash under cold running water.
    3.    Panfry chorizo in olive oil until crispy.
    4.    Fold beans, tomatoes, paprika and chorizo into the heated pulled pork mixture, season to taste and place into baking dish.
    5.    In the same pan used for the chorizo, add breadcrumbs and macadamia nuts. Sauté until golden brown and add parsley. Check the seasoning and place on top of the pulled pork, forming a crust.
    6.    Finish in the oven for a further 10 minutes.
    7.    Serve with a fresh garden salad.
