Lightly season pork schnitzels with salt and pepper. Coat in flour, dip in beaten eggs, coat with breadcrumb mix and lightly press with hand.
Heat non-stick pan until medium hot. Add some olive oil and pan fry pork about 1–2 minutes each side until light brown. Place on a oven tray, spoon on tomato pizza sauce, olives, eggplant, tomato and sprinkle with mozzarella cheese.
Finish under a hot grill until cooked, garnish with chopped basil and serve with a garden salad.
