Healthy, tasty, easy peasy.


    500 g lean pork stir fry
    1 tbsp vegetable oil
    1 tsp oil extra
    2 cloves garlic, finely chopped
    3 tsp finely chopped lemon grass
    1 bunch asparagus, cut into pieces
    1/2 bunch broccolini, cut into pieces
    1 tbs water
    100 g fresh shiitake mushrooms, thinly sliced
    1 ½ tbsp soy sauce( salt reduced)
    1 tbsp Hoisin sauce
    1 tsp finely grated lemon rind
    1 tbsp fresh lemon juice
    Heat half the oil in a large wok over a medium high add half the pork and stir fry for 1–2 minutes stirring continuously. Transfer to a plate and cover loosely with foil and set aside. Repeat with remaining oil and pork.

    Reduce heat to medium and add extra oil, garlic and lemon grass cook for 1 minute. Increase heat to high again and add asparagus, broccolini and water and quickly stir fry cook 3–4 minutes. Return pork to wok with mushrooms, soy, hoisin, lemon rind and juice. Stir to combine and cook for 2–3 minutes to heat pork through.

    Serve immediately with steamed rice.
