Combine ground coriander, cumin, paprika and chilli paste rub into pork.
Use 2 tbsp oil to cook pork. Heat half the oil in a large wok over medium–high heat add half the pork and stir fry for 1–2 minutes stirring continuously. Transfer to a plate and cover loosely with foil and set aside. Repeat with remaining pork.
Reduce heat to medium add remaining oil and cook garlic for 2 minutes add ginger and pumpkin and cook for 3 minutes stirring continuously.
Return pork to wok add spinach, coriander and lemon juice stir to combine and cook for 2 minutes to heat pork through.
Serve immediately with couscous.
