Pulled Pork Nacho Bowl

Ingredients

  • 1 tbsp Olive oil
  • 30g pkt Salt-reduced taco spice mix
  • 600g pkt Easy Peasy pulled pork
  • 400g Red kidney beans, rinsed, drained
  • 2 Tomatoes, diced
  • 1 Yellow capsicum, diced
  • 1 Lebanese cucumber, diced
  • 1 Avocado, chopped
  • 1 tbsp Lime juice
  • 3 cups Steamed white rice
  • ¼ cup Sour cream
  • ⅓ cup Coriander leaves

Directions

Step 1

Heat half the oil in a large frying pan over medium heat. Add the spice mix and cook, stirring, for 1 min or until fragrant. Stir in 1/3 cup (80ml) water. Add the pulled pork and drained beans. Simmer, uncovered, for 5-7 mins or until heated through.

Step 2

Meanwhile, combine the tomato, capsicum, cucumber and remaining oil in a bowl. Season with salt and pepper. Mash the avocado and lime juice together in a bowl. Season with salt and pepper.

Step 3

Spoon the hot steamed rice into serving bowls. Top with piles of the pork mixture, tomato salsa and guacamole. Dollop with the sour cream and sprinkle with the coriander leaves. Serve with the corn chips.

TIP: Pulled pork and bean mixture and tomato salsa can also be served in flour tortillas or tacos. Serve with guacamole and sour cream on the side.
