    Ingredients

    Skewers-
    -    1kg honey & rosemary pre-marinated pork belly, cut cubes for skewering
    -    300g block of halloumi, cut into cubes the same size


    The rest-
    -    Sourdough loaf, cut into thick slices
    -    1-2 cloves of garlic, peeled
    -    750g mixed variety of tomatoes, roughly chopped
    -    2 spring onions, sliced
    -    Garlic infused olive oil for drizzling
    -    Extra virgin olive oil for drizzling

    Directions

    -    Pre-heat grill to med-high
    -    Thread the pork and the halloumi onto metal skewers, put on to flat oven tray and place under hot grill for approx 20 mins, turning 2-3 times.
    -    Meanwhile, drizzle the bread with a little EVOO on each size, sprinkle with salt and pepper and char grill them on a hot griddle pan. Approx 3 mins each side. Then rub each side lightly with the raw garlic clove.
    -    Put the tomatoes and spring onions into a bowl and toss with a generous amount of garlic infused olive oil and salt and pepper.
