Heat a non-stick wok or pan until hot. Add sesame oil, stir-fry pork mince until it starts to brown, add onions, ginger, garlic and fry for a few minutes until fragrant.
Add stock, oyster and soy sauces. Simmer for about 15 minutes until tender, add noodles and stir-fry vegetables in the last few minutes of cooking.
Taste and adjust as required. Serve with chopped spring onions and fresh coriander.
