    500 g lean Pork mince
    2 tbsp sesame oil
    1 onion, sliced
    2.5 cm piece of ginger, chopped
    3 garlic cloves, crushed
    2–3 cups chicken stock (salt reduced)
    3 tbsp oyster sauce to taste
    2 tbsp soy sauce to taste
    450 g Hokkien or egg noodles, well drained
    400 g stir-fry vegetables
    Heat a non-stick wok or pan until hot. Add sesame oil, stir-fry pork mince until it starts to brown, add onions, ginger, garlic and fry for a few minutes until fragrant.

    Add stock, oyster and soy sauces. Simmer for about 15 minutes until tender, add noodles and stir-fry vegetables in the last few minutes of cooking.

    Taste and adjust as required. Serve with chopped spring onions and fresh coriander.
