    Ingredients

    For the pork marinade-

    • 4 pork chops/1 kg
    • 1 tsp garlic powder
    • 1 ½ tsp smoked paprika (hot or sweet)
    • 1 tsp onion powder
    • 1 ½ tsp mixed herbs
    • Juice of 2 lemons
    • ½ tsp salt
    • ½ tsp cracked pepper
    • 1 tbsp oil

    For the salad-

    • 3  sweet corn cobs, husks removed
    • 2 Lebanese cucumbers, diced
    • 2 tomatoes, diced
    • ½ red capsicum
    • Juice of ½ lime
    • ¼ red onion
    • S&P to taste
    Directions
    • Put the pork into a container for marinading and mix well with all the marinade ingredients. Refrigerate and leave to marinate for at least half an hour.
    • On a griddle pan on high heat, cook the corn and capsicum whole, turning regularly for approx 10 mins till slightly blackened and charred.
    • Once cooked, slice the kernels off the corn cobs and slice the capsicum into strips, putting them in a large salad bowl with the rest of the salad ingredients, tossing well.
    • Cook the chops on high heat on the griddle pan for approx 3-5mins each side till cooked through and rest for 5 mins off the heat before serving alongside the salad.
