    Ingredients
    8 x 60 g Pork Steaks, prepared from the
    Leg, Scotch or Loin and trimmed of visual fat
    salt and pepper to taste

    Salsa

    290 g can three bean mix, rinsed and drained
    ½ red onion, chopped
    1 medium cucumber and tomato, diced
    10 sprigs fresh parsley, chopped
    1 tsp brown sugar
    2 tbsp olive oil
    2 tbsp apple juice or water
    2 tbsp wine vinegar or lemon juice
    250 g baby lettuce or spinach leaves, washed
    Directions
    To make salsa, mix together all ingredients except lettuce. Taste, season and chill.

    Heat BBQ (or non-stick pan) until hot. Brush pork with a little oil, lightly season with salt and pepper. Cook pork to ‘medium done'. Rest for 2–3 minutes in a warm place.

    Serve with lettuce and bean salsa.
